Switch default backup schedule from hourly to daily at 2:45am — avoids hammering the cluster and conflicts with renovate at :00.

Jellyfin and home-assistant remain hourly at :30 (high churn). All other apps including home-automation fall back to the new daily default.

Retention extended from 24h/7d to 30d/8w/6m — storage is local TrueNAS so no cost concern; gives a meaningful 6-month recovery window.
